Description
This peanut butter banana bread isn’t as sweet as my grandmother’s version, but just sweet enough with brown sugar and honey balancing out the natural sweetness of the ripe bananas. Serve it with a smear of peanut butter or another favorite nut butter.
Ingredients
Scale
- 3 medium ripe bananas, mashed
- 1/4 cup butter, melted and cooled
- 1/4 cup natural peanut butter
- 1/2 cup packed brown sugar
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla
- 2 cups whole wheat flour
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Preheat the oven to 325 degrees F. Spray a loaf pan with cooking spray and set aside.
- In a medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl or stand mixer bowl, mash the bananas with a fork. Add the melted butter, peanut butter, brown sugar, and honey. Mix to combine.
- Add the eggs and vanilla. Beat until combined.
- Mix the dry ingredients into the banana mixture and stir just until combined.
- Pour batter into the prepared loaf pan.
- Bake for 55 – 65 minutes. Start checking at 50 minutes and rotate the pan if needed.
- Test for doneness. When a toothpick inserted comes out clean you are done.
- Let cool in pan for 10 minutes before removing to a wire rack to cool completely.
- Slice and enjoy!
Notes
I like to keep my bananas chunkier so you can see pieces of banana in the finished bread.
Craving banana bread, but don’t have overripe bananas? Place your bananas in a paper bag with the top folded down loosely. Check the bananas in 12 to 24 hours for ripeness.
