Kale & Fontina Grilled Cheese

Description

This grown-up grilled cheese is packed with veggies, cheese, and balsamic caramelized onions. Paired with a glass of wine this makes the perfect end to a long day. 


Ingredients

Scale
  • 1/2 Tbsp olive oil
  • 6 leaves kale
  • 4 oz fontina, shredded
  • 4 Tbsp balsamic caramelized onions
  • 4 Tbsp butter, softened
  • 8 slices of thick whole grain bread

Instructions

  1. Heat olive oil in a skillet over medium heat. 
  2. Tear kale leaves into pieces and place in warmed skillet. Sprinkle with salt and pepper to taste. 
  3. Saute kale until softened. Remove from heat and set aside. 
  4. Spread one side of each slice of bread with 1/2 Tbsp butter (or as much as you like)
  5. Heat skillet or griddle over medium heat. 
  6. Place four slices of bread butter side down on the warmed griddle. Assemble the sandwiches on pan – onions, cheese, kale, second slice of bread. 
  7. Cook on each side 4-5 minutes or until golden brown on the outside and melty on the inside. 
  8. Enjoy!

Notes

These sandwiches are also great with raspberry or apricot jam.
