Description
This grown-up grilled cheese is packed with veggies, cheese, and balsamic caramelized onions. Paired with a glass of wine this makes the perfect end to a long day.
Ingredients
Scale
- 1/2 Tbsp olive oil
- 6 leaves kale
- 4 oz fontina, shredded
- 4 Tbsp balsamic caramelized onions
- 4 Tbsp butter, softened
- 8 slices of thick whole grain bread
Instructions
- Heat olive oil in a skillet over medium heat.
- Tear kale leaves into pieces and place in warmed skillet. Sprinkle with salt and pepper to taste.
- Saute kale until softened. Remove from heat and set aside.
- Spread one side of each slice of bread with 1/2 Tbsp butter (or as much as you like)
- Heat skillet or griddle over medium heat.
- Place four slices of bread butter side down on the warmed griddle. Assemble the sandwiches on pan – onions, cheese, kale, second slice of bread.
- Cook on each side 4-5 minutes or until golden brown on the outside and melty on the inside.

Notes
These sandwiches are also great with raspberry or apricot jam.
