Baklava Thumbprint Cookies

Baklava may have a varied history with a disputed origin story, but there is no disputing that it is delicious.
The discussion over the origins of Baklava even got so heated that it boiled over into the “Baklava War” in 2006. Thankfully there wasn’t a violent uprising, but after the chefs of Cyprus claimed baklava as their national emblem for the 20th anniversary of Europe Day at the Vienna summit Turkey had some stern words for them. They even have a town that is called the “cradle of baklava” – Gazientep. Officially the EU has given protected status to the dessert for Turkey, but all of the regions still enjoy their individual variations and histories.

So what is baklava?

This delicate sweet pastry is found throughout the Mediterranean, the Balkans, and the Middle East. Many nations claim it as their own and each has taken the basic concept and adapted it to their culture. But the basics are phyllo, nuts, and honey syrup.

Making your own baklava

Making baklava is definitely a process, but well worth it.
To begin, take one thin sheet of phyllo and brush it with oil or butter. Top it with another sheet of phyllo and brush with your fat of choice. Depending on the recipe you will continue this from two to fifteen dough sheets. After several layers of dough and butter (or oil) you top it with a mixture of nuts and spices. Top with more brushed phyllo layers and another nut layer. Finish off with dough layers.
The other important piece to this dish is the syrup made of water, sugar, honey, and a flavor such as lemon, rose water, or orange blossom. This sweet mixture gets poured all over the fresh from the oven baklava and then it needs to sit for at least an hour before enjoying.
As you can see it is a time-consuming dish, but when given the time and attention it deserves creates an unforgettable and delicate dessert.

Description

Baklava thumbprint cookies are perfect for the holiday season. All the flavors of classic baklava – honey, walnuts, cinnamon – in a sweet little cookie package.

  • 1 stick unsalted butter, at room temp
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 Tbsp ground cinnamon
  • 2 Tbsp water
  • 1 large egg yolk
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1/4 tsp salt

Filling

  • 1 3/4 cup walnuts, finely chopped
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 350 degrees F. Line two cookie sheets with parchment paper and set aside.
  2. Prepare the filling first so it has time to set up. In a small non-reactive sauce pan, combine the sugar, water, and honey and place over medium-high heat. Bring the syrup mixture to a boil (watch closely because it will boil over).
  3. Reduce the heat and simmer the syrup for 15 minutes, stirring occasionally.
  4. Remove the syrup form the heat and stir in the chopped walnuts. Let the syrup cool while you make the cookies.
  5. In the bowl to a stand mixer, beat the butter and the sugars until combined. Add the egg yolk and vanilla and beat to combine. Add the cinnamon and water and beat to combine. Add the flour and salt and mix until a dough forms.
  6. Using a 1 Tbsp cookie scoop, divide the dough into 28 to 30 portions. Roll each portion into a ball and place on the prepared cookie sheets.
  7. Gently press the center of each cookie ball down using your thumb or a 1/2 tsp measuring spoon.
  8. Bake the cookies 8-10 minutes until light brown on the bottom. If the indention rises gently press it back down while the cookies are still warm.
  9. Let the cookies cool five minutes and then transfer to a cookie rack to cool. While the cookies are still slightly warm scoop filling into the indentions.
  10. Let the cookies cool completely and the filling firm up, about one hour.
  11. Enjoy these spiced thumbprints with a little egg nog or coffee.

Notes

  • You can sub other nuts for the walnuts if you prefer.
  • You can add more flavoring to the syrup to mimic your favorite baklava – lemon peel, orange blossom or rose water.
